Turkey Roll Ups

Ingredients

  • 4 oz turkey slices
  • 2 tbsp hummus
  • 1 cucumber, thinly sliced
  • ½ red pepper, thinly sliced
  • ¼ cup microgreens
  • ⅓ avocado, sliced

Method

  1. Spread hummus on turkey slices. Then layer veggies, avocado, and microgreens and roll up.

*For vegetarian and vegan diets, fill 3 butter lettuce leaves each with 2 tbsp hummus, and remaining vegetables
