Greek Salad

Ingredients

  • 1 large cucumber
  • 1 cup grape tomatoes, halved
  • 1 red bell pepper, chopped
  • 1 shallot, diced
  • ½ cup Kalamata olives
  • 6 oz cooked chicken, cubed*
Vinaigrette
  • ¼ cup red wine vinegar
  • 1 tbsp lemon juice
  • â…“ cup olive oil
  • 1 tbsp Dijon mustard
  • 1 garlic clove, minced
  • ½ tsp dried oregano (or 1 tsp fresh oregano)
  • â…› tsp salt
  • â…› tsp black pepper

Steps

  1. Place all of the vegetables and the chicken into a bowl.

  2. In a jar, add all of the vinaigrette ingredients. Seal with a lid and shake to combine.

  3. Pour vinaigrette over the salad and toss to coat.

*For vegetarian diets, use feta cheese

*For vegan diets, use extra firm tofu
