Taco Skillet

Ingredients

Taco seasoning
  • 1 tbsp chili powder
  • 1 tsp ground cumin
  • ¾ tsp sea salt
  • ½ tsp garlic powder
  • ½ tsp paprika
  • ½ tsp onion powder

  • 2 tbsp avocado oil or olive oil, divided
  • ¾ cup (1 medium) yellow onion, diced
  • 1 bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 lb 97% lean ground beef or turkey*
  • 1 zucchini, diced
  • 15 oz (1 can) fire roasted tomatoes
  • 1 cup black beans, drained
  • 4.5 oz (1 can) green chiles
  • 2 tbsp nutritional yeast
  • ¼ cup cilantro, chopped

Steps

  1. Mix taco seasonings together in a bowl and set aside.

  2. Heat 1 tbsp of oil in a deep saute pan or cast iron skillet over medium-high heat. When the oil is hot, add the onion and cook, stirring frequently to soften. Add the garlic and cook for another minute until fragrant.

  3. Add the ground beef, zucchini, fire-roasted tomatoes, peppers, black beans, and green chiles and cook to break the beef up slightly. Add ¾ of the prepared taco seasoning. Continue to cook, stirring frequently until no pink remains and the temperature reaches 165°F.

  4. Sprinkle the nutritional yeast and cilantro on top and serve.

*For vegetarian and vegan diets, use 3 (12 oz) packages extra firm tofu crumbled instead of ground meat
