Banana Pancakes

Ingredients

  • 3 oz or about â…“ of a banana, mashed
  • 2 pasture-raised eggs*
  • 1 scoop vanilla protein powder (whey preferred)*
  • 1 tbsp almond flour
  • 1 tsp vanilla extract
  • ½ tsp cinnamon
  • ½ tsp baking powder

Steps

  1. Mix banana, eggs, and vanilla extract in a medium size bowl.

  2. Add the rest of the ingredients to the bowl and mix well.

  3. Pour 2 tbsp of batter onto a hot griddle and cook for 2-3 minutes on each side.

*For vegan diets, mix together 2 tbsp freshly ground flaxseed with 6 tbsp water for eggs and let sit for 15 minutes to gel, substitute plant-based protein powder for whey protein
